Food For a Cold Day!

How to make an easy pot pie on a cold day!

I have the tendency to not want to move when it rains.  A good book, a hot cup of tea and a blanket and I am good for the day.  I often tell my husband we can't move to Oregon or Washington because I will become couch-logged (forget about anywhere on the east coast).  Plus I love sundresses too much.

Alas, I do love the three days a year that we receive rain in LA.  And in celebration of such a day, I wanted to make a warm dinner that makes you feel good inside.  Not wanting to leave the house made it trickier... so after scouring the fridge, freezer and cabinets, I settled on chicken pot pie.  A meal that makes me think of childhood and cracking through the crispy top layer and into creamy goodness.  

A gourmand I am not, but I can make something out of nothing quite easily, thanks to random cooking lessons from my mom growing up.  I pulled out two dozen think layers of filo dough, baked some chicken which I cut into cubes, mixed up some cream of mushroom soup, peas, carrots and corn, and away I went.  Shockingly, much easier than most meals.

Easy-Peasy Chicken Pot Pie Recipe:

Bake chicken with simple garlic powder and salt.  Bake through and cut into bite size pieces.

Thaw filo dough and line multiple layers in your oven-safe individul soup bowls.

Open a can of mushroom soup, mix in frozen, canned or fresh carrots, corn and peas.  Add chicken.

Scoop soup into filo lined bowls.  Cover with several layers of filo dough and brush with olive oil or butter and seal the edges.  Poke a few holes in the top with a knife or fork. 

Place in oven for 20-25 mins on 350 degrees.
